Beetroot juice, beetroot juice, beetroot juice.

I love that film. ;)

I'm really appreciating having the allotment and garden overflowing, with growing vegetables and fruit, right now. Our first real crop(after the rhubarb) this year, has been beetroot. We gave much of it away, but there was still an abundance of the red stuff in our kitchen the week before last.

I've never actually cooked with beetroot, only ever really having in in vinegar or on salads and always being a bit put off by the red stains! So I embarked on some research and ended up having the time of my life! There is even a whole website dedicated to love of beetroot...very useful indeed! You can even eat the leaves raw in salads, or cook with them - they can be cooked as you would cook spinach.

What will I do with all this beetroot?
So much soil! Who knew beetroot didn't grow in jars?
Gorgeous colour.
You can use beetroot raw or cooked.
Add some pears.
The beginnings of Jamie Oliver's  Beetroot, Pear and Feta Salad.
Now what to do with the rest of it??

  2. You could always pickle it. And it might make a lovely chutney, actually. That salad looks yummy though.
